Mango Sambar – Easy Sambar

People who like sambar but couldn’t attempt because of its complexity in preparation , please go ahead and read this recipe. This one is for you.When you enter south India the first word you could probably hear is sambar. I haven’t seen a person who don’t like sambar. This is a very simple recipe and doesn’t involve tamarind, all you need is a raw and sour mango.
Ingredients:

Raw mango (Don’t use ripe mango, sambar tastes good if the mango is sour)
Toor dal – 1 cup
Onion – half
Tomato – 1
Sambar powder – 1.5 tsp
Turmeric powder – 1/4 tsp
Mustard seeds
Curry leaves
Red chilies
Salt
Oil

Method:

1) Clean the toor dal and add 2-3 cups of water in a pressure cooker.Add turmeric powder, sambar powder, chopped onion, chopped tomato and chopped mango pieces (1 inch size pieces). If the mango is not sour enough add little bit of tamarind juice in the end.

2) Pressure cook the dal to 2-3 whistles.

3) Temper the sambar using mustard seeds, curry leaves and red chilies.

Tasty sambar ready!!!

Sambar – Version 2 – For Pongal , dosa & idli

Ingredients:

Toor dal – 1 cup
Tomatoes – 2
Onion – 1 medium size
Tamarind extract from 1 lime size ball
Curry leaves
Mustard seeds
Salt
Sugar
Oil

Grind to paste:

Fry the following items in a dry pan till you get a nice aroma and grind to paste with little amount of water.

Coriander seeds – 2 tbs
Cumin seeds – 1/2 tbs
Peppercorns – 4-6
Fenugreek/Methi seeds – 1/2 tbs
Red chilies – 4

Arachu vitta sambar

Method:

1) Heat oil/ghee in a pan, add mustard seeds, curry leaves and red chilies.

2) Make julienne cut on the onion (thick pieces).

3) Add onion and saute for a while.Next add chopped tomatoes.

4) Now add the ground paste and tamarind extract.Let it cook for few minutes. Big chunks of onion cooked in this mixture brings a special taste.

5) Add cooked dhal, salt and a pinch of sugar.

6) Garnish with cilantro.

Arachu vitta sambar is ready.

Sambar – Version 1 – For rice

Ingredients:

Toor Dal – 1/2 cup
Tomato – 1
Onion – 1 medium size
Drumstick – 4 pieces or any vegetable of your choice
Sambar powder – 2 tbs
Turmeric powder – 1 tsp
Tamarind extract  from 1 lime size ball
Mustard seeds
Curry leaves
Red chilies

Sambar

Method:

1) Pressure cook toor dal with 1.5 cups of water and turmeric powder. (2 whistles will do). Keep this aside.You may extract cooked dal water for rasam.

2) In a pan or pressure cooker , add chopped onion (do not finely chop the onion) ,chopped tomato, drumstick , tamarind juice and sambar powder. Cook till the drumsticks are well done. Pressure cooking will speed up the process (single whistle will do).

3) Now add dal to the cooking ingredients.

4) For tempering, add mixture of clarified butter (ghee) and oil to a heated pan. Add mustard seeds and wait till they splutter.Next add curry leaves and red chilies. Add this to sambar. Health conscious people can avoid ghee.

Yummy sambar is ready!!
